Description

Low Acyl Gellan Gum is usually a fine, freely flowing white to off-white powder. Low Acyl Gellan Gum has no odor or taste when dry.

    Low Acyl Gellan Gum is used in yogurt to improve texture, prevent whey separation, and can be used in pasteurized yogurt, cheese products, cream cheese, and plant-based yogurt/cheese. 


  • Beverage: 

    Low Acyl Gellan Gum is used in suspension-type beverages, fruit juices, sports drinks, and hot canned acidic beverages to maintain stability. 


  • Baking filling: 

    Low Acyl Gellan Gum is used in fruit fillings and cream fillings to provide heat stability and prevent water leakage during baking. 


  • Meat products: 

    Low acylated xanthan gum as a binder or to improve water retention. Sauces and seasonings: Low acyl xanthan gum is used in mustard sauces and dressings, providing gloss, stability and suspension capabilities.
