Description

L-cysteine is a white crystal or crystalline powder, soluble in water, slightly odorous, poorly soluble in ethanol, and insoluble in organic solvents such as ether. Melting point: 240℃, monoclinic crystal system. L-cysteine is one of the sulfur-containing amino acids and is a non-essential amino acid. In living organisms, it is synthesized by the replacement of the sulfur atom of methionine with the hydroxyl oxygen atom of serine through cystathionine. Glutathione can be generated from L-cysteine.

  • Bread: 

    L-cysteine, as a dough conditioner, reduces the disulfide bonds of gluten protein, enhances extensibility, shortens proofing time, makes the finished product softer and larger in volume, and delays aging and hardening.


  • Instant noodles/frozen dough:

    L-cysteine enhances mechanical processing tolerance, prevents cracking during freezing, and maintains elasticity after reheating.


  • Meat products (sausages, hams) : 

    L-cysteine inhibits fat oxidation and extends the shelf life; It reacts with sugar to produce a meaty flavor (Maillard reaction), reducing the addition of artificial flavorings.


  • Condiments (soy sauce, sauces) : 

    L-cysteine neutralizes the unpleasant odors during the fermentation process and enhances the umami flavor. Prevent soy sauce from Browning and maintain a stable color.
