Description

Microcrystalline cellulose, mainly composed of straight-chain polysaccharide substances bonded by β-1, 4-glucosidic bonds, is a white, odorless and tasteless crystalline powder composed of extremely fine short rod-like or powder-like porous particles that can flow freely and are formed by hydrolyzing natural cellulose to the limit degree of polymerization (LODP) with dilute acid.


Among common plant fibers, microcrystalline cellulose accounts for approximately 70%, while the remaining 30% is amorphous. Microcrystalline cellulose is widely used in the pharmaceutical, cosmetic, food and other industries. Different particle sizes and moisture contents have different characteristics and application scopes.


Microcrystalline cellulose can stabilize foams and emulsions especially during high-temperature processing. Form a gel with a texture similar to oil paste; Improve the heat resistance of pectin and starch gels; Improve adhesion; Replace fats and oils and control the growth of ice crystals. The reason why microcrystalline cellulose can stabilize emulsions and foams is that it adsorbs on the interface and reinforces the interface film. Microcrystalline cellulose is a common ingredient in low-fat ice cream and other frozen sweet products.
